Khara Boondi

For the Boondi-
1. Besan Flour- 1/2 cup
2. Water- just enough to make the batter
3. Oil- For frying

For the Mixture-
1. Peanuts- 1/4 cup
2. Fried Gram- 1/4 cup
3. Curry Leaves- 2 sprigs
4. Red chili powder- 1/2 Tsp
5. Salt- To taste
6. Asafoetida- a pinch
7. Oil- 4 Tsp

To make the Boondi-
I followed the instructions on this video-

Thanks to Chef Sanjay. I made the batter, by mixing the flour and water. Also, as per his suggestion, rested it for about 10 minutes. I also used the normal slotted spoon, which everyone normally has at home. I kept the consistency of the batter, similar to that of Dosa batter. The real test of consistency, is for the batter to fall through the holes of the slotted spoon as soon as it is poured on the spoon, and yet form spherical balls with no tails. If the batter does not fall through, it is too thick.

To make the mixture-
Deep fry the Peanuts, Fried gram and Curry leaves, till they are crisp and set them aside. In a separate pan, heat about 4 Tsp of oil. Add the salt, Chili Powder and asafoetida and mix well. Add the fried Boondi, peanuts and other fried ingredients and mix well.
Cool the Mixture and store in an Airtight container.
