If you have a sweet tooth and are looking for a natural, non processed sugar substitute, Honey is your best option. As all foods with sugar, Honey should also be consumed sparingly, especially in people who are diabetic.
Ingredients- makes 4 servings
- Rava – 3oz or 1/2 cup
- Honey- 3oz or 1/2 cup
- Ghee- 1.25oz or 1/4 cup ~
- Water- 5oz or 1 cup ~
- Cardamom- 2 Pods, powdered
- 10 Saffron strands soaked in a TBSP of milk
- Cashews and Raisins- a fistful
Heat 1oz of ghee in a thick bottom saucepan. Add the cashews and raisins and saute till the raisins puff up and the cashews are golden brown. Add the Rava to the ghee mixture and keep stirring on a low flame, till the Rava gives a nice aroma. Add the water and stir continuously. The Rava starts cooking and starts to thicken. Add the honey, cardamom and saffron milk, stir in. Add the remaining ghee. Stir well till the mixture starts leaving the sides of the pan.
Check for the sweetness. For us this amount of honey was perfect. If you prefer it sweeter, add a little more honey.
