  2. Roasted and crushed peanuts- 1 cup
  3. Coriander leaves, washed well and chopped- about 1.5 cups
  4. Turmeric powder- 1/2 Tsp
  5. Goda masala- 1 TBSP
  6. Lemon juice- 1 TBSP
  7. Sugar( optional)- 1 Tsp
  8. Salt- to taste
  9. Mustard seeds-1/2 Tsp
  10. Chili- ginger paste- 1 Tsp
  11. Hing- a pinch
  12. Olive oil- 1 TBSP
  13. Oil for frying

Take a thick bottom pan and heat the olive oil. Add the mustard seeds. Once they stop spluttering, add the Hing and the chili ginger paste. Add all the rest of the ingredients. Add about 1/2 cup of water and make a thick paste. Cook the paste till it forms a soft ball and leaves the sides of the pan.

Take a plate and grease it with some oil. Put the prepared dough and press into a 1 inch thick cake.

Once the cake cools down, cut into 2 inch X 2 inch squares and deep fry in medium hot oil till the vadis turn golden brown and crisp.

Tastes great with a dip or a chutney.
